Homer’s Virgin Siren

Cool down on a summer’s day or relax in the evening with this non-alcoholic refresher. Its preparation is so simple that it barely deserves to be called a cocktail, yet its tastiness will surprise even your foodie friends and it firmly deserves a spot on our list.

1.Cold steep 2g of Greek Mountain Tea in 750ml of Tonic water in the fridge for four to five hours.

That’s it. Simple. Done. Strain and serve cold, with or without ice. Enjoy.


Smoke and Mirrors

As the evening draws in, revert to subterfuge and beguile your guests with this simple, but intoxicating, blend of ingredients. Slightly smoky, sweet and very aromatic, this brew is the perfect companion on a warm evening and is dangerously easy drinking.

1.Cold steep Lapsang Souchong tea in 500ml of water using our Cold Brewing instructions.

2.Add two slices of lemon, five shots of Maraschino and a dash of rose water and allow to rest in the fridge for another 30 minutes.

Serve cold.


Pirates of the Caribbean

This contemporary iteration of a rum gimlet, developed by our friends at Merchant House, is the perfect evening treat due to its explosive flavours and full-blown mouthfeel. Prepare the syrup in advance, mix and serve.


1. Prepare 1 litre of Darjeeling tea using our Cold Brewing instructions.

2.In a saucepan, bring the tea to a simmer and add 500g of caster sugar, 500g of Demerara sugar, a heaped tablespoon of blackstrap molasses, 25ml Anise Liqueur and one heaped teaspoon of freshly ground Szechuan pepper.

3.Simmer until all the sugars have dissolved and then while still hot, carefully pour into a sealable bottle. This syrup will last up to three weeks if stored airtight in the fridge.


1.Mix one part of your syrup and two parts brown rum per glass. Stir gently to mix.

2.Serve with a twist of orange zest for an additional kick and panache.
